One of my favourite spots close to Sydney is Jews creek as it flows into the Turon.
Usually quiet, but I don't know about that time of year.

Easy to get to , but does require a 4wd.

River always has water in it.

We are going to the fantastic Dalmeny Camp Ground from 2-17 January but in demand and will be booked out. Third year in a row. Also there are some good 4x$ drives in the Deua National Park and surrounds.

Where the creek meets the Turon at the Woolshed flats.
Does get busy on long weekends, but you can always find a spot away from the crowds.

If not just keep going post the diggings. Plenty of spots further along.

Aahh, got it !!  Yeh, a couple of nice spots past the Diggings up the dead end track.

Although I must admit, with the van on, the Diggings is the easiest to get to !!  The steep hill out is a bit harder than going down !!

I live on the Central Coast there are a few good beachfront holiday parks also a good camping ground at Glenworth Valley. We are going a bit further north to Birubi Beach near Port Stephens I think your best bet would be to ring around and see who has sites available.
