I have 3 young boys, and we want to initially do some local camping (north east Vic) to settle into the camper then move on to a Tassie trip and in a few years when the boys are old enough I want to go up the centre to Darwin and back down the coast.

I have four kids with two being littlies.
IMO the most important thing is ease of setup and repack. With the little ones it somewhat dampens the experience when the pack up takes a long time and watching the kids while you do it;
You know the stuff = "Dont pat that snake" "Please put down the machete" "Dont lick the chainsaw" etc etc
I have chased my tail with this a bit with a number of different campers. The big things for us seem to be kitchen packup and putting away kids sleeping gear/bedding etc. We have now moved towards something similar tothis;

Whilst the one I linked to is in the US I reckon you should be able to get a similar setup around the 12k here in aus. Teardrop campers are on the rise at the moment with a lot more on the web for sale.
What I really like about the concept is you have a hard sided camper to sleep in with a coil spring mattress, the roof top tent with a mattress and the kitchen is always set up at the rear.
