This is my set up. I just drilled a hole big enough to take the hand pump in a screw cap. And use another cap without the pump when traveling. I added a piece of tubing to the pump so it can reach the bottom if the Jerry can.

Good thinking there for that idea, I like it.
For me, I have a 85 litre tank below, and when Minister of all things money approves the expenditure etc etc. I shall have 2 additional 50 litre tanks outboard behind rear of tyre guards (in the exact same position as your jerry can) and have a pump and tank management system across the 3 tanks.
The twin jerries will be just additional storage for filling into the tanks when needed and to then be used to fetch water from creek - tap etc.
So access to fill point is OK for me. Just safe stowage is what I need.
I have in mind to mount them on the side below the rear swing out twin Tyre carrier I'll make soon, again, when I'm allocated the funds for such a thing......
