I grew up on a beef/dairy farm. We always walked into the paddock and said "that one looks goods" An hour later and its hanging in a cool room for at least 2 weeks.
Left home and travelled and all of a sudden I had to buy my meat, Couldn't work out why even the good stuff was ordinary, never really eaten steak away from home before.
Drove cattle trucks for a few years and worked out what's going on. The cattle are chased around the stockyard and into the truck, transported for hours getting bounced around, chased off the truck, chased around the saleyards and back on the truck to get bounced around in the back of the truck again, then chased off the truck at the abattoirs. Now I'm not saying anyone is being cruel or harming the animals but they are getting stressed and jostled around. Now what happens to your muscles when your stressed and jostled around? Yep lots of lactic acid and tension.
Now that I run my own stock again I'm back to doing it the old way and its ridiculously good.
I had a few Melbourne mates down one weekend for a surf followed by some beers and a BBQ. I opened up the freezer looking for some decent steaks and realised all I had left was eye fillet and skirt steak and there was no way my eye fillet was being shared so on the Barbie went the skirt. The boys smashed that skirt steak and thanked me for cooking the best steaks they'd ever eaten.
