Well, after stalking some of your rebuild forums, I have decided to give it a go myself.
We have just bought a 1986 Jayco Swan. Very good for it's age, but I need a project - so I'm gonna pull it to bits and TRY to improve it.
These are my plans - please feel free to give any advice on what you have come up against in your own rebuilds.

1. Strip the entire interior. New cupboards, wall panels, ceiling, LED lighting.
2. Remove the oven and sink altogether and the fridge ( which does not work anyway)
3. Install new 12v battery system (did not have one) then re wire.
4. Install a slide out kitchen for use under annex with 12v pump.
5. Remove all outer skin and reclad. (Not sure what with yet - possibly gel coat fibreglass??? Advice please.) checker plate or propellor  strip down below.
6. Install stereo system with iPod connectivity. Speakers inside aswell as waterproof speakers on the outside skin.
7. Remove roof vent and reclad roof.
8. Install another water tank.

We are going to use it till the end of summer to make sure we have not overlooked some other changes that we will want to make. Then when the first rains come, we will be into it. Over the next few months I will be slowly stock piling all I need to do this in one hit.

No advice to offer on rebuilding, but recently I queried someone else RE point 6: have you considered a re chargeable portable sound dock? Bose make an absolutely brilliant unit for around $550 and you can use it anywhere eg back yard, shed, away from CT if others are sleeping etc.
Otherwise your plans sound like lots of work, but very rewarding at the finish. Good luck.

To Myswag,
We have an 82 model Swan that has been heavily modified, HERE
There are a few more things we would like to do to Touche to make things a little bit better, Wind down legs, replace the tool box on the back with an Aluminum one, Remodel the kitchen and replace the steel Disco wheels with 6 stud LC wheels and the axel stubs to suit.
You will find on that page links to files that will explain how the lift system works, there might be something of use there for you.
Start a thread in Your Camper Trailer Build section, other will be interested to see how things progress.

I already have a portable Bose dock - and yes they are brilliant, but I want to be able to just take off in the van without having to pack a thing, thus the plan for the stereo.

Yes I do expect to be very busy, but luckily I have plenty of time on my hands. I am a shift worker who works 4 days on 6 days off, so I need things to do otherwise I get into trouble.
I won't start the build until about June, so in the mean time will get some "before" pics posted soon.
