500mm overhanging the edge of the beam is quite a bit, if it was the end of the sheets overhanging it wouldn't be a problem, but the edge is a bit far IMHO. i wouldn't have it overhanging past the 2nd ridge that you would screw the roof sheet down to the beam with, but you may find by doing that it could void and engineering that comes with not having it overhang the beam. the last 2 i erected i overhung the sheets about 50mm past the end of the beam, but like i said, i wouldn't go past that 2nd ridge for stopping wind upliift of the sheets. the sheets cut easily if you buy the correct cutting blade for the job (you'll likely have to cut one side then flip over and cut the other for depth reasons), though the polystyrene does make a mess in the yard.
