Title: suggestions for cooking a whole bream on the bbq

hello everyone, I have one cleaned and scaled bream, a roll of alfoil and a bbq. that's about as much as I know,i would like to cook for the wife on bbq tonight what would be the easiest and best way to cook.

Hi wmarsb, We normally just stuff the gut cavity with some lemon wedges a bit of garlic
and mixed herbs. and score the sides so it cooks even.

Bream has a nice texture and a delicate flavour so you won't want to spoil either by
(a) overcooking it or
(b) killing it with spices.

Cooking in foil with a lot of stuff wrapped around it is very popular but, to me, it's the same as steaming the fish. If that's your preferred method, I like butter, maybe garlic, ginger and shallots with a drizzle of Tamari (a low salt soy sauce).

Filleting the fish, dusting with a bit of flour seasoned with pepper and salt and frying in a little olive oil and butter, served with veggies or salad,  is hard to beat.

For hot weather, if you have a bit of mint, salad veggies, some chilli and fish sauce, cut the fillets into cocktail size and make a nice Vietnamese fish salad. Serve the salad on the plate with plenty of spicy dressing and then lay the hot fish cocktails on the top. Buy some champagne and tell her you love her.

Taking a few extra exotic ingredients on the road can really spice up any meal.

Don't know about bream but sometimes with coral trout I put slices of lime & lemon with cracked pepper in foil. I have done it also with mango slices,but lemon/lime was better. I do sweet lip like this also which is probably more like bream

Bream to me is best cooked by stuffing it with onion tomato and lime or lemon
Rapped in foil don't over cook will be ready when flesh is white
And a good bottle off white

I don't eat fish myself but I bought a boat so I must at least put a effort in to catching a few. filled the fish with a few slices of lemon,a little pinch of mixed herd and a good dollape of butter. did it on bbq 10 mins each side plus about an extra 3 mins{that 4kg gas bottle finally run out}. the wife enjoyed it that much she left none for the cat. might even go fishing this weekend.
